This is a kit of a few of our recent, favorite vegan, gluten-free cookies. There’s a date and almond butter cookie, a double dark chocolate chunk cookie, and a chickpea, dark chocolate coconut cookie. In terms of flavor, all were a pleasant surprise, but, being dark chocolate lovers, we liked the double dark chocolate one the most. We’d love to know what you think the comments, though. If you makes the chickpea cookie, we’d love to know how you like the flavor. We thought this recipe was especially inventive.

Ingredients for This Vegan, Gluten-Free Cacao Nib, Date & Almond Butter Cookie
A Conscious Kit
This simple vegan cookie recipe comes from the blogger and baker, Dana (a.k.a. The Minimalist Baker). You can check Dana’s blog out (here) for more simple, vegan recipes. In addition to being vegan, this cookie is gluten-free and is super easy to make, requiring only 6 ingredients — which is one of the reasons we like it so much. It uses no artificial sweeteners, and gluten-free, whole rolled oats. She notes that you don’t need to include cacao nibs, but we have a sweet tooth.

Ingredients for This Vegan, Gluten-Free Double Dark Chocolate Chunk Cookie
A Conscious Kit
Double. Dark chocolate. Chunk. Cookie. If you like dark chocolate, need we say more. This cookie is vegan, gluten-free & nut-free, and incorporates dark chocolate – instead of the usual milk chocolate. As you may know, dark chocolate is relatively more healthy. Something you may not know, we like dark chocolate more than milk chocolate. Yes, the latter fact is pretty amazing, but if you want to learn more about the former, you can read about the benefits of dark chocolate here. Although this recipe does take a bit more time and has a few more steps than the one above, it delivers in flavor. Again, though, we’re biased because we love dark chocolate. Ingredients for This Vegan, Gluten-Free Chickpea Chocolate Chip Cookie
A Conscious Kit
This cookie is a bit different, in that it uses chickpeas, but chickpeas pair surprisingly well with chocolate and coconut. While it wasn’t our favorite of the three, in terms of flavor, it’s certainly a cookie that should be tried and experienced. For us, it has a bit too much of a ‘nutty’ taste to it, so we recommend a few additional pieces of dark chocolate to balance it out. We used a recipe from Detoxinista to make this cookie, so feel free to click over to her blog to see more cookies and desserts like this one.
